Kenny asked for a cheesecake for his birthday cake this year. Mark made some yummy mini-cheesecakes a couple of weeks ago that inspired Kenny for this idea. Yes, Mark watches too many cooking shows. I was not about to make these little cheesecakes on account of it takes to much work and ingredients. Anyone who truly knows me, knows that I'm one of those "5 ingredients or less" girls. So I go looking in my ward cookbooks for an easier recipe and found one submitted by (now you old Ashland Ranch Ward people hold on cuz this is a blast from the past) Minda Pacheco. It is the Toffee Cheesecake recipe with the crust made out of cookie dough and the cheesecake portion calls for crushed up heath candy bars. I used Symphony toffee candy bars instead. Let me tell ya, it was delicious! I started cutting up the cake before I realized that I still needed to put in candles and sing to Kenny so the cake isn't looking it's best.
